Yes. Our dry cacao beans are fermented (5–7 days in wooden boxes) and sun-dried at the farm. They are ready to roast, grind or use in artisan recipes. This is not raw unprocessed cacao — it is quality bean for artisan chocolate making.
Dry cacao beans and nibs: store in a cool, dry place away from direct sunlight. In good conditions they last 12–18 months.
Cacao paste: at room temperature it keeps well for 2–3 months. In the refrigerator it lasts 6–12 months. It hardens when chilled (completely normal) — it melts easily when warmed.
Cacao paste is 100% pure ground cacao — no sugar, no milk, no additives. It has an intensely bitter flavor and is the base ingredient for making chocolate. Chocolate is cacao paste mixed with sugar and, in the case of milk chocolate, powdered milk. With our paste you can make your own chocolate at home, controlling exactly what goes into it.
Yes. We handle wholesale orders for dry cacao beans (from 50 kg up to 300 kg), cacao paste (from 5 kg) and nibs (from 5 kg). Volume pricing is significantly more competitive. Write to us for a personalized quote.
That is "fat bloom" — crystallization of the cacao butter. It is a natural process that happens when the temperature changes (for example, if the cacao went from cold to warm). It is not mold, the cacao is not spoiled and is 100% safe to eat. The whitish or grayish appearance is simply the cacao butter that migrated to the surface and crystallized. In fact, fat bloom is a sign that our cacao is pure and contains its natural butter intact — something impossible with industrial products that remove or replace it with vegetable fats. To prevent it, store cacao in a cool, dry place without sudden temperature changes.
We welcome visits to Fundo Maranatha in San José de Sisa, San Martín. You can see the entire process from tree to finished product. Write to us in advance to schedule a date and check availability.
