San Martín: Peru's Cacao Capital and Home of Fine Flavor Cacao

If you want to understand why Peruvian cacao is so prized in the artisan chocolate world, you need to know San Martín. This Amazonian region, located in the high jungle of northern Peru, accounts for more than half of the country's cacao production and is home to some of the finest flavor cacaos on the planet.

Where is San Martín?

San Martín is a region in northeastern Peru, in the cloud forest and high jungle belt (between 300 and 2,000 m above sea level). It borders Loreto to the north, Ucayali to the east, Huánuco to the south, and La Libertad and Amazonas to the west. Its capital is Moyobamba, but the largest and most dynamic city is Tarapoto.

Unlike the Amazonian lowlands, San Martín's high jungle has a more moderate climate — temperatures between 18°C and 28°C, well-distributed rainfall throughout the year, and a relative humidity that favors cacao cultivation without the heat or rain extremes that complicate other producing regions.

Why San Martín is perfect for cacao

It is no coincidence that San Martín has become Peru's cacao capital. Several geographic and climatic factors converge ideally:

Altitude and temperature

Quality cacao is grown between 300 and 1,200 m above sea level. At higher altitudes (within this range), the bean matures more slowly, accumulating more aromatic compounds. The Huallaga, Sisa, Mayo and Biavo valleys — all in San Martín — offer these conditions naturally.

Soils rich in organic matter

High jungle soils are clay-loam with high organic matter, phosphorus and potassium content. This natural fertility, combined with the shade of timber and fruit trees that growers maintain in their plots, creates the ideal ecosystem for fine cacao.

Genetic biodiversity

The Peruvian Amazon is the center of origin of cacao. In San Martín, native populations, Criollo and Trinitario varieties, and unique local crosses coexist — found nowhere else in the world. This genetic diversity is the foundation of San Martín cacao's aromatic complexity.

Peru, in turn, is recognized by the ICCO (International Cocoa Organization) as a producer of fine flavor cacao — a distinction shared with very few countries in the world, including Ecuador, Venezuela, Madagascar and Papua New Guinea.

San José de Sisa: the epicenter of fine cacao

Within San Martín, the district of San José de Sisa — El Dorado province — is renowned for its high-quality Trinitario cacao producers. Located along the Sisa river at around 800 m above sea level, this area's microclimate produces beans with an extraordinary aromatic profile: floral, fruity and chocolate notes that artisan chocolatiers specifically seek out.

One of the historical challenges for San Martín producers has been the middleman chain: from farm to end consumer, cacao can pass through 4 or 5 pairs of hands, and at each link the producer loses margin while the consumer loses traceability.

The direct-trade model — producer to consumer — changes this equation. It allows the producer to receive a fair price, the consumer to know exactly where what they buy comes from, and San Martín cacao to be recognized for what it is: one of the best in the world.
